The gelatin is a little like a net – lots of short bits connected together to make kind of like a framework. This ‘net’ can hold everything together in one place, but still move around a bit – that’s why jelly can wobble, but not fall apart. Before you make a jelly, the gelatin is all hard and stuck together, but adding hot water allows it to move and expand and fill up your jelly mould. As is gets colder, the gelatin is not able to keep moving as easily, so will stay in place. I hope that’s explained a bit more, sorry if it’s still not clear.
